Message Tracking on Exchange 2000

I need to track some messages "from" "to" certain domains. Does anyone know how? I need to track emailes sent to and recieved from for example hp.com

MS Exchange has builtin message tracker, but it can track messages only when all mail server in route are Exchange servers and they are tracking enabled.

Yes, trackings are enabled on all the exchanges servers. I have been using this but I guess my question is that is there a filter function or something like that to search for emails that are sent to and recieved from certain domains?
