Keyboard/Tft monitor kit
When I press these keys the server (W2k) goes in standby or hibernate mode.
Is it possible to disable these keys

The extra keys may be supported by the presence of the MS IntelliType software. If this is the case then you could try uninstalling it (there would be little use for it on a server anyway).

And the software I'm using is just the standard W2k server from Microsoft without any HP navigator tools installed.

Right click on your desktop and then on Properities to view Display Properties. On the "Screen Saver" tab, click on "Power..." button.
In the "Power Options Properties" dialog, click on the Hibernate tab and uncheck "Enable Hibernate Support" if it is checked.
In the Advanced tab, there is an option to change the behavior of the sleep button. But, the only two options are to have the button put the system in standby mode or to have it turn the system off.
But, a better solution for you may be the keyboard lock feature. On many servers, there is a keyboard lock button on the front of the server to lock the keyboard so no accidental button presses will effect the system (such as the LH3000, LC2000, etc.).

Where using LC2000r U3 and LT6000r U3 servers.
The options you mentioned are not avaliable.
Hibernate tab is missing and for the power button the only option you have is power off.
Keyboard locking is not an option, because where just starting installing the OS and servers
