Upgrade Windows Server 2003 Appliance Edition to STD or enterprise edition

We have a server that was initially installed by HP to provide storage (NAS) to our environment. Over the years it has had some other software installed on it, and now the company wants to virtualise it. When I've run the P2V, on first boot it prompts to activate windows, and I've attempted to do this via phone and get advised that the installation ID is invalid. I assume that this is because the OS has come from HP. Is it possible to upgrade the OS to STD or Enterprise without losing the settings at all to get around this activation issue.
