making bootable dvd with ISO image, The image is larger than what can fit on a single dvd. How do I span it over multiple dvd's?

What do you have on it? Anything more than vg00?
You shouldn't be using ignite to back up your user data.

Yes, I am aware of that, but I wanted to include some very important data for the application that doesn't live on the SAN.

You back that up with a different tool.
The purpose of ignite is just to get the OS working, not to restore your applications and data.
