Anyone know of any documentation on installing/configuring BIND/DNS on an
HP Workstation.

I have been through the fire on this one...
Here are some thoughts:
Look at the man pages for hosts_to_named - this will get you there for
most std kinds of things, you will have to edit/add to the files for anything unusual.
Run NAMED from a temp dir until you are ready to switch over
Try a tail -f on the syslog while you start named and watch for errors
