Never mind - adding inst.text to the boot options solved the problem.

1. My kickstart script locks up indefinitely, printing "link not ready" for eth1, eth2, and eth3 every minute or so (I gave it about 5 minutes before I reset). Those are not plugged in - they will never be "ready". Is there a way to tell it to ignore those?

2. Just booting the .iso ( CentOS-Stream-8-x86_64-20210302-dvd1.iso ) gets almmost all the way to the end, then locks up at a blakc screen right after the "starting anaconda" (or similar) text step.

I'm using an EPYC 7702 with 8x 1tb SSDs in Raid6 (EUFI)

the .iso is mounted through firefox browser html5 console (works fine for "systemrescuecd-5.iso" and does boot OK of course - just never reaches the centos install GUI).
