What is the SFP pack ? I've seen this as an option to purchase when configuring the MSA2312fc solution. Is it required to connect host servers to the switch fabric ?

A SFP is a device converting from optical to electrical signal. It's needed to connect devices to SAN switches.

I was only going to purchase lc-lc fibre cables for connecting hosts to the fibre switch. Do I need to buy sfp's for all hosts too ?

No, the transceiver is part of the adapter.

I've looked into the MSA2312fc's quickspecs from january, but could not find the term 'SFP pack'. Can you show a reference or give a bit more context - maybe something else than a simple transceiver is meant.

I assume it is simply a sales option. It's a bundle of SFPs, presumably slightly less expensive than if you ordered that many individually. I'm guessing there are (4? 8? 10?) in a pack.
(A part number would have helped.)
