there are lot of programs fr backup, we are using Netbackup 6, but you can use also other products, you will be able to recover
the full mail store(s) or yust one mailbox.

No way to do this as you want with the MS SQl MSE!!!!

You can do exchange backups with NTBACKUP on windows 2003 and Windows 2000

or use an enterprise class software for this like HP Dataprotector.
