Depending on the version of your raidcontroler, the configuration is saved on the disks itself.
However, I'm confused about your description of your configuration:
- You had 2HDD in mirror: was this your c:(system drive) or your d: (data drive)?
- If it was your system-drive, how were you able to restart your W2K server if you removed the mirror-set: this would leave you without an OS?

So I presume it was your data drives (but why on a mirror-set?), so here goes what you should do to replace your data disks (I think because your setup/question is not 100procent clear):
1) Put all services that store data on this disk (e.g. exchange, SQL....) to startup manual (document for which service you did this) and stop these services.
2) Take a full backup of your logical data-disk (d:\ ?).
3) Shutdown your machine
4) Fysicaly remove old data-disks, and replace them with your new HDD
5) Start you server, and using the compaq/HP array configuration utility, make a new array of your new HDD's and create a logical drive.
6) With the OS running, perform a format of your new data-drive, and perform a restore of your old data
7) Set all the correspondig services to startup automaticaly, and restat them.
8) Your system should be up and running, with new HDD and more diskspace, right?
