I'm setting up automatic event notification for any critical event to be emailed out of hours.

Is there any way of referencing a custom group of servers rather than having to specify each server individually with the 'server name =' option?

If you are using SIM 5.0 then, yes, it is possible. But if you are using SIM 4.x, then it is not possible.

When you are creating a new event handling task, 1 of the 2 options is "with events and system attributes that I specify"

Drilling into this option you get that selection. By OS type, by OS version, by hardware type, etc...
