Is there a way to have SIM look for SNMP on an alternatate port during the discovery process, ie something else then 161?

No, the solution does not currently allow the ports to be changed. HP has registered all of the ports that it uses with the Internet Assigned Numbers Authority (IANA, at www.iana.org) and thus there should not be a port conflict with other software
