Is there a tool that can capture the entire array configuration for support and documentaion purposes.

The Service Processor collects the current configuration as a large HTML-formatted file multiple times a day.
Beyond that, look at https://www.storefrontremote.com/ and also http://storevista.3partools.com/#/ (click on About to get started).

Both require adding permission information to the system and waiting a couple days for the SP to send it back and it get filtered through the various sub-systems.
