Number of VLANs

Hello, 

we have 2x Backbone Switches A5500 on a hotel (over 350 rooms) and 22x 2500 Series Switches. 

Is it possible to set a VLAN for each room? or will go the performance from speed (100Mbit each port) down?

Speed won't be an issue:  On an L3 switch, there's hardly any difference between routing and switching speed.
The 802.1Q standard allows max 4096 VLANs, but some lower end switches have limit way lower.
Also be aware that L3 switch routing table will become large,  and that you have to create 350 DHCP scopes...
