That depends on your host OS - in Windows world it would be just one server per LUN (unless you run a multi-node cluster)
It has nothing to do with EVA though.

You will find all requirements and restrictions for the EVA on http://www.hp.com/go/sandesign
Go to Part III Chapter 10 of the "SAN design reference guide"
Since the very same LUN can only be shared by a cluster and/or a shared filesystem, the respective cluster/shared filesystem maximum applies.
The max number of servers you can connect to a single EVA is 256; thus if your cluster/shared filesystem supports 256 nodes this is your maximum!
