What if I pull an 18Gig active disk from a VA7100 and replace it with a 36Gig, and let it rebuild the set. Can I then use the extra 18gig of that 36gig drive?
If it works perfectly, it must be broke.

so if I replace all 15 disks, 1 by one, waiting for the rebuilds to end, I could use all space?

Yes, if you replace them disk by this and you wait each time the rebuild is done you will gain extra capacity
