migrate raid to another server

The situation is the following :

3 x 8.2 GB HD RAID5 mounted on a smart array 431 controller in a proliant DL380 host a DC controller under W2K server.

My purpose is to :
1. migrate the raid from raid 5 to raid1
2. Move the new raid1 from the proliant DL380 server to a Proliant DL360 server, with a different integrated controller raid smart from above, without any boot problem with W2K.
