We understand "skol", but it may be viewed as Swedish influence in some occasions. The "true Finnish" word would be "kippis!". I think you have a good chance to be understood correctly when pronouncing it, although you are not likely to sound exactly like a native speaker.
We *do* have some dialect/joke versions that are... challenging... for average Indo-European speakers. Their reproduction requires non-US-ASCII characters, which seem to get garbled in the forum replies.
The version of Savonian dialect, which is actually in use:
"Holokyn kolokyn!" [note: add two dots over all O:s for correct representation]
The joke version, which is probably invented for the express purpose of being difficult for foreign speakers:
"Tarpattia kakattimeen!" [note: two dots over all A:s]
