No change in kernel parameters is required to connect to a SAN. The driver for the HBA card will add a module to the kernel and force a system reboot.
Kernel configuration changes will depend on how the data is deployed on the SAN and what kind of data it is. For example, kernel parameter changes are normally required to run oracle.

This does not depend on the SAN. It depends on how you use the server. There are perfomanmce gains to be had, depending on what applications you are running.
To actually answer the question:
1) What applications do you run.
2) What is the buffer cache? dbc_max_pct, dbc_min_pct
Adjusting the buffer cache and improve performance for certain applications.

On the clents from this NFS server we run:
CATIA V4 & V5
PDGS
UG
IDEAS
HyperMesh
LUM
FlexLM
The actual server is only NIS Slave and SAN
