Really, I'm looking to install a version of Linux that will use LVM. Has anyone set this up and how dificult would it be? What versions of Linux would be best for this?

Both Linux Mandrake 7.0 and RedHat 6.X include the RaidTools software which provide "LVM like" tools in the installation base.
I currently use all of these versions in a Telephone Company for their Billing system and ISP.

You can also download and compile the software from http://linux.msede.com/lvm/index.html#download - but this software is only for kernels 2.3.10 and above.

from YAST. I had to do manual pvcreate though, otherwise fine, mirror and all.

I'm using the SuSE lvm rpm on RedHat 6.2 with a 2.4.0-test3 kernel to provide LVM support with sucess.

Setting up your machine for full LVM is tricky but NOT entirely out of scope.
I'd recommend you grab 2.4.4 and the latest lvm tools http://www.sistina.com/lvm
They also have instructions on building a machine with the root filesystem as an lvm volume.
I've followed these instructions and it all works perfectly.
