How do you cancel an email that has been set up to go out automatically at a certain date and time?

You should be able to delete the send schedule for that item, then the item itself.

What add-in for sending a scheduled item are you using?

If you are using the "Delay send" feature in Outlook 2007, then you should be able to go into your "Outbox", and delete the email.
