You go to the various systems involved and check their logs:

HP-UX: /var/adm/syslog/mail.log
Linux: /var/log/maillog

Windows: Use the GUI.

There's a e-mail tracking service call TailMail
that lets you track your sent e-mail (and other web publications as well) open/read
timestamp and location (per IP). It is at

The service works on web and also on mobile phone.

You can also use this service to track the
clicking on the URL links inside your email
and web contents. This interestingly provides
confirmation on your receiver/reader's level
of interest in your e-mail/web contents.
