There are more than 500 commands just in /usr/bin. The documents listed above by Patrick will document the commands. However, learning HP-UX by reading the man pages is like learning a new language by reading a dictionary. If you have experience with another version of Unix such as Solaris or Linux, then the Rosetta Stone for Unix http://bhami.com/rosetta.html will be helpful.
But if you are new to Unix, you'll need more basic training to get started.
