Linux comes with an excellent set of mail server tools.

Read up on sendmail at http://www.sendmail.org

Pay special attention to relay and spam issues so your server does not get abused when you bring it up on the public Internet.

You can even use it to replace exchange, should you so choose.

I would recommend you to install Webmin from http://www.webmin.com/ . If you are new to linux, this is a graphical environment which will help you administrate everything in your linux system including setting up and configuring your e-mail server. Good luck!

Well.. Maybe the Hula server is something usefull.. It is something different of sendmail/postfix/qmail/.. but worth a look. Just depends on what you need..
