I need to document what upgrade options are available for our various HP-UX servers. Is there any specific documentation that anyone can point me too?

The HP online doc has some upgrade documentation for the "later" model of servers. Go to www.docs.hp.com , click on "browse by topic", look for "systems hardware". In there (depending on the server you're looking for) should have the docs you're looking for. For example (if you want K class), click on it and one of the doc that is relevant to your question is ..
"HP K360, K370/K570 and K380/K580 Upgrade Procedure Guide"
For L classes it's ..
"rp5400 Upgrade Guide"
