We've maintenance and support but not to the level that we cna just ask HP to perform FC-HBA/NIC installs and de-installs.
But can we actually do these ourselves and not pose problems to whatever warranties or support contracts?

SolutionI installed a G-bit card in a N4000 a couple of weeks ago. HP shouldn't care as long as you don't break anything in the process.
If you were to break something or damage the machine, then that may be a different story.....

As long as you have your ESD strap on, I dont see a problem with this.

It is however covered under some hardware service contracts. I always favored not doing it but have done it a few times. I was warned about violating service contracts but never had any issues with subsequent service on many machines I did self installs on.
