Are You using reduntant SANs ? (servers are connected to two SAN switches) Just make zoning change on another SAN first and wait for a few minutes and do it then to another.
And if You are using non-reduntant SAN. It still won't "stop" your SAN. It just deliveres the new SAN config to all FC switches and hosts might get rescan events.

Yes, you can create new zones, or add new members to the existing zone. These are online activity. But be carefull while zoning. If you are giving the wrong wwpn or port ID, those devices will not communicate.

A single fabric attached FreeBSD box lost connectivity during any fabric re-zone. That is the only host I have ever had lose connectivity during a rezone and this was with a Cisco MDS 9506.
