one way should be the following:
both storages should be presented to the same hosts and then copied the file systems/files from the MSA to EVA newly created volumes.

yes, this will work. I've done this a many times. I often used host-based mirror, to mirror the volumes instead of copying the data. Often this worked without downtime for the application.
