EVA Converting disks between raid levels & best practice for SQL

Is there an "easy" way to convert a disk from say Vraid 5 to vraid 1 without having to snapclone it?

Also, i can't seem to find anything about best practices for SQL on EVA (I'm specifically referring to SQL 2005).

No, there's no way to change the RAID level of a vdisk directly, you have to clone it to another with different RAID level.
