P4500 ESX Volumes

I am looking at improving my volumes after expanding my P4500 SAN to 4 nodes. One thing I am unclear about:

Recommendation is to put similar function servers which can be backed up in one snapshot, into one volume.

Does this mean for the OS drive of the server or the server and all its disks? I have all Windows servers. To clarify, if I have 3 file servers each with 800GB data disks with file shares, which makes sense:
option1:
volume 1 (200GB)- 3 servers C: drives
volume 2 (2.4TB)- data drives with file shares for the 3 servers

option2:
volume 1 (2.6TB) - 3 file servers with their data drives

Any help would be appreciated.
