best practices to deploy vsa

Hello,
I am new to Lefthandâ ¦ please provide details when responding
I have a small satellite office with 2 ESX servers. Configured the RAID so that each ESX has 2 data stores. One for console and another for VSA.
Is it best to maximize the data-store where iSCSI volume will be created?
Also what is the best practices to provide high availability in case one ESX goes down?
