how about "apropos memory"? It will list a lot of tools and function.
As a starter, which tool lists processes and their parameters? Right the "ps" command, quick look into the man page gives us the parameter "waux" or "-ef" for a full detailed view of all processes. Voila the memory consumption is there for each process.
If you are interested on the global memory informations, the apropos command will list a tool called "vmstat".

I found several sollutions.
First of all you can always download top. But pay attention that top can't run all the time because of the performance it takes.
An other sollution is Perfcap where you can monitor several system features.
