I'm running Win2k3 SP2.
Is there a rollback feature or perhaps a bootdisk I can use to rollback?

Try reseating Memory & all Add-on cards.

If you have a RILOE (Remote Lights-Out) PCI card installed then remove it and attach the video cable back to the system board video connector. Try this and see if it makes any difference.

All lights are green. Let me clarify my question. I was a bit tired last night so I wasn't able to provide full detail.
So, after I updated the NIC, Video and SmaryArray 5 drivers or updates, I rebooted and it came up with a "ESC to continue" or The option to configure the array. I selected configure array and everything looked normal so I rebooted and hit ESC the following round.
Then the screen would blank out but all the lights on the server were GREEN. I don't know if this had to do with video or Smart array.
I'll try to methods provided but its been YEARS since I've played with Compaq servers.

When the server has a blank screen, shouldn't I atleast be able to ping the server? I'm a bit concerned since after the NIC drive update, it disabled both NIC. I tried to enable the NIC being used (nic2) but it wasn't enabling so I had to enable nic1 and configure the appropriate address.
I thought that was rather weird. Now, I also can't RDP obviously b/c I can't ping.
Any help would GREATLY be appreciated.

SolutionWas it F2 To configure ? If you have pressed F2, this might have erased all DATA from the disks;

Does this sounds familiar ? As you mentioned You went into the Configuration to check Settings.

Try re-seating ALL possible components;
Memory; HDD; processors; heatsinks; PPM; PSU; etc etc.
If it still doesn't help, try booting with MINIMUM configuration.
