I think all the servers are having single processor installed in it. Hence you are getting three readings. If two processors are installed, there will be 4 readings.
Two cores will have two readings. The third is a fake reading of the slot 2.
You can set Cation as 158F and Critical as 175F. (Safe settings)

not sure about how smh reads the settings, but you can run insight diagnosts at the same time, and from the survey choosed advanced and all from the drop downs.
Then search for the temperature in the tml doc and there should be 8 sensors which will show you the temperature in every single zone.
Then you can compare the data
