HP Automatic Restart, server 2003 DL380
The server keeps restarting, and I am finding a STOP error in the event viewer, but no blue screen is coming up.

Depending upon the specific Proliant DL380 Generation series (G2, G5, etc..), it has Automatic Server Recovery (ASR) in BIOS, which can be configured.

You'll need to know your specific Proliant Gx model and then check the BIOS version to see if any updates or advisories have been posted.

DL380 Generation 1 Drivers and Firmware for W2003:

If you have something other than the first generation then these won't work for your system. Just locate the correct server series here:

Disable ASR and then look at the logs. If it won't stay up, then use iLO to look at the IML logs. iLO will function without the server being booted. These are NVRAM hardware logs.
