HP Proliant ML370 with Win2003

I know this may sound a little strange but bear with me - what I have is a Dual Processor HP Proliant ML370 with Win2003 installed and SQL running - now the question is, due to the "CPU Licensing" required in SQL (and the ML370 being the only box available for a while) is it possible to 'temporarily disable' one of the processors?

I understand that it would seem like a backward step but in technical terms, is this possible - if so, how?
