First tim you boot a Proliant with a Smart Array Ctrl. and unconfigured disks.
It will confiure RAID automatically. Unless you hit esc at the prompt.
ORCA - Hit F8 when prompted at the Smart Array discovery during post.
ACU - Boot on the Smart Start CD and Choose the maintenance tab.
Run the ACU.
On a running system just open the ACU (On-line)

I would expect the manual to be provided with the server, from factory, on a CD.
But you can find them on www.hp.com

You need to visit the support page and search the downloads for the appropriate OS. Support page for DL360 G6 is

Click the "Get drivers, software & firmware." link, select your OS and search for the Array Configuration Utility which may be listed under Storage Controller or System Management. It's there for Windows Server at least.
