Just want to make sure before I plug the server into the high voltage R3000 ups.
Also - If I was to purchase another UPS R3000, is there a business case where I should purchase the high voltage model instead of the low voltage model?

I believe all G2 or better Proliant servers are auto sensing, maybe even some G1's but I am not sure.
This means that you can supply any voltage 110-120-130-210-220-240, etc... anywhere in the rated range and not have to worry about manually switching anything. Even HP laptop power supplies are autosensing, or at least most newer ones.
Always check out the server specs to make absolutey sure and call HP if you have to be 130% sure, but you should be ok with just plugging into the UPS.

Now I would personally perform a cold shutdown if you are moving a server from low voltage to high and not make a "hot" swap. I would imagine it would work, but I would want to test it first. As far as low vs. high goes, I have always been told high is more efficient. I'm no expert though on electrical loads.

DL380 has Auto ranging power supply, so you can comfortably connect it to HP UPS R3000 (high voltage model). Nothing has to be configured on the server side.
Your doubt is quite valid
If you are planning to buy another UPS , you have to basically decide based on your local country Electrical Codes
