NIC Teaming
I am very interested in using the EtherChannel capability of the two NC3134 NIC's that I installed in our new server. My only concern is that I will loose the redundancy you have when connecting to different network switches (not possible with EC) and using NFT. Is it or will it be possible to have a combination of the EC and NFT solutions so you could have a backup path for an EtherChannel interface?

Not until Cisco supports Port Channeling across multiple swithes.
They just recently started supporting across multiple blades within the same switch.
You can't implement any other way because of the technology and the way layer 2 addresses are used within this technology.
