I ran into the same problem today, and implemented the same solution as Nigel. The HP Network Config Utility version 9.50.0.11 displayed the NC360T NIC and allowed me to set up teaming, but only after I had gone back to the following driver:
HP NC-Series Intel N1E Driver for Windows Server 2003, version 9.12.30.1 (file CP010952.exe).

In my case, I discovered the McAfee Host Intrusion/Firewall software was the culprit. It installs an intermediary network driver between the NIC and the OS that was preventing the NCU from seeing the NICs. Once I disabled that driver, I was able to recreate the network team. I then verified the driver was enabled on the team.
