New HDD for current Array
I will buy 3 x 300GB and migrate the current array to those new HDD. Then remove those old 72GB from the server.
Is it possible to do that ?

With a bit of messing around you may be able to achieve this quickly but with some risk.
Therefore, a full backup would have to be advised before attempting to do this using ANY method.
As you will already have made this backup, then the standard method dealing with this situation would apply:
Back up the entire system, remove the 3x72GB disks, configure new array with 3x300GB, then restore all from backup.

No. Array migration mean migration from one RAID level to another (from RAID-1 to RAID-5, for example) or changing array stripe size.
IMHO, backup/change drives/restore, as Marc Carney describe, is best for your situation.
The second option is "replace one-by-one" and use diskpart

But again, I think backup/change drives/restore is best and safe solution if you can downtime server for some time.

So, the best solution is.
- ghost everything on that old array including system and data partition.
- remove those old hdd and install the new one
- configure the array with new hdd
- restore everything to the new array
Is that correct ?
