Ive done this quite a few times for various customers, all with good results.
Replace each drive one by one with a larger drive, letting the array rebuild it. Once rebuilt on the first drive, replace the second and so on.
Once finished, there will be more space available in ACU which you need to extend into the Raid 5 array. (make sure you turn the extend / expand priorities up to full before cos it takes a while!)
Then, in Windows, I normally create a new logical drive (drive letter) and move things like your Exchange database to the new drive etc...

Ive never done it that way, but theres a program called Diskpart.exe that is supposed to work well. (on your server if its running 2003)

As far as I know you can do this on any drive APART from your system drive (ie C: drive)
