Didn't see your reply until today but that is the fix
I had a ticket in with HP & it wasn't until I got the ticket elvated to Level 2 that I got that fix. I guess it's been documented here
I applied the hotfix & haven't had an issue with reboots since

Hi,
I am also facing same issues with HP Proliant DL360 Server recently, I followed the below steps. Its easily installed OS.
1. Reboot the server & get into BIOS using F9 key.
2. Select System Configuration & press enter.
3.Then slect BIOS/Platform Configuration.
4.Select Boot options
5.Select Boot Mode.
6.Select Legacy BIOS mode.
7 Select UEFI Optimized Boot & disable it.
8.Again come back to System Options & select USB Boot options & removable flash media boot sequence & USB as first boot option
9.Now save, reboot and start the installation

You talking about Gen9 ? There is NO UEFI mode in DL360p Gen8.

Which is a shame. Why cant they add it to a BIOS update? It's a drag having to keep building two versions of my images, one for UEFI and one for BIOS...

BIOS and UEFI are both a type of firmware and they are mutually exclusive. You can't add UEFI to a BIOS based system. This article is one of the best interpretations I've ran across

don't expect changes for gen8 servers, except intel microcode updates.
But also the newer systems can be bootet in legacy BIOS or UEFI mode, the user has the choice.
