Upgrading System Hard Drive

I am currently working for a client that has a ProLiant 3000, with a single 4.3 GB drive as the system drive and four 36.4 GB data drives. They'd like to upgrade the system drive to something larger.

Can I simply install a new 36.4 GB drive in the last cage slot and use Ghost, Drive Image or similar to duplicate the small drive to the large one, shut the machine down, and remove the small drive? Then move the new large drive to slot one and boot?

Will this work or not? Also, I'm assuming I need to copy the Compaq EISA partition?
