As ProLiantWatch said, it's an added layer of security for protecting data, and ensuring a system hasn't been tampered with. It's a relatively new option in servers; Microsoft's Bitlocker in Windows Server 2008 is one of the rather limited number of things that use it.

Recently Intel came up with a pre-boot hypervisor protection scheme called TXT, which also depends on having a TPM module.
