You can install Server 2008 on a DL380 G3 if you install the 32-bit version

You can only use 32-bit version of MS WS 2008, if you need this mashine for backup solusions like secondary AD then it might be enough to support that. You must remember that 2 GB of ram is needed (recommended) to run it.
