That said, does the reboot occur each week around the same time. For example, is a backup job kicking off around this time, heavy read/write activity occuring, AV scan kicking off, etc?
Assuming it is the available memory that is getting depleted and causing appmon to reboot the server, there are a other factors/actions to look at:
1) If you haven't already, you can install NAS SAK 2.01 Service Pack 1a. http://h18023.www1.hp.com/support/files/server/us/download/21019.html
2) Make sure PSM is at the latest released version (SAK sp1a should have this included). http://h18023.www1.hp.com/support/files/server/us/locate/73_5622.html

There also could be an application with a memory leak consuming the memory, so it would be good to note when the reboots are occuring what applications are running at that moment.
Upgrading to WSS may help, but it all depends on what is happening when the server reboots. If, for example, the culprit is PSM, upgrading to WSS will solve the issue, because WSS does not have PSM -- it uses Microsoft's VSS application instead for your snapshots. Also, if you upgrade to WSS, be sure to get the latest service release at: http://software.hp.com/portal/swdepot/displayProductsList.do?groupName=NAS
