I presume you ment "restoring OS to factory default" rather than actual resetting of anything. Here are some links which will guide you and give all info needed.

You can still try doing the 1000S restore if you can afford to wipe the unit and slate it for R&D later (if restore does not work out using factory drives). I am betting that your BIOS is compatible and Win 2000 SP3 is "flexible" enough to accomodate a P-3 chipset unless your version is a 320GB (Celeron CPU). The safer way would be to use any 4 blank identical drives (even temporarily borrowed) so you don't kill the factory install in case it is working and still have a roll-back plan. You'd need to label the original drives and reassemble the replacements. Then follow the same path as for 1000S above.
That would give you OS mirror and raided data partition. Then follow system software upgrade from 1000S at http://h18023.www1.hp.com/support/files/server/us/locate/73_5622.html , just don't install (NSI Double-Take/StorageWorks) Data Copy-S - you'd need to have a separate (long since) discontinued license for it.
I have done a successfull similar scenario with replacement of original drives on a 1000S with double capacity ones. But that is a much more recent piece of hardware. I don't have your version for a lab to try.
