Switching from Multi-site Cluster to Single Site + Remote Copy
Due to another office being opened, I have the option of off-siting 1 of our lefthand nodes, the only probem is that the link is only 100Mbit, so not really up to specification.
Is it a non destructive process to switch from a multi-site cluster to a single site cluster with remote copy setup (the over all aim is if we have a problem at our head office, we can just fetch the other node back over in a van and we are back in business.

I would NOT do that unless your arms are tied. If you turn your two-node cluster into a single node cluster, all your future updates will suddenly become a disruptive event and your LUN availability will definitely be at risk. If this is just for DR, you should come up with a different solution as remote snapshots aren't necessarily the best way to go.
If you really want DR, buy a single VSA license and use that for remote snapshot DR, but you really really really shouldn't run your production SAN on NR0 when you have the option of using NR10.
