How to serve VLAN with multiple subnets via DHCP
Can anyone advise on whether, or not, this configuration is possible and if so how to do it. We'd like to be able to feed one vlan with two different IP subnets using DHCP. The DHCP server is on a seperate VLAN.

I _think_ it would work but it wouldn't be pretty!
You'd have two IPs assigned on that VLAN for the two gateways and you'd have just one helper address for the VLAN.

it's called "multinetting".
Long time ago this situation was commonly used, it's only in the DHCP-configuration.
you need to configure two scopes on the dhcp-server, and then create a "superscope" that contains both scopes.

Support DHCP clients on a single physical network segment (such as a single Ethernet LAN segment) where multiple logical IP networks are used.
