I've never run across any issues when setting them to the maximum amount of VLANs.

1) when setting max-vlans, only set to what you need plus a little...memory is allocated for the switch tracking of vlan info and that memory is "hard" allocated, meaning it can't be used for anything else, so even tho a switch could support lots of vlans, config only for what you need...
2) the provisions asic switches (3500/5400/8212/6400) support 256 vlans by default...(not 8 like older switches)
